Breaking Room

The Breaking Room (BR Cooler) module tracks stock in the secondary processing area where primal cuts are broken down into retail or wholesale portions.

Workflow

Cooler (primals) ??? Breaking Room (portioning) ??? Freezer / Dispatch

Receiving into the breaking room

1. Go to Inventory ??? Breaking Room.
2. Click Receive from Cooler.
3. Select the items to transfer from the cooler (source) into the breaking room.
4. Enter the quantities and click Confirm.

Recording output

After portioning is complete, record the finished product quantities:

1. Click Record Output.
2. Select the finished product codes produced.
3. Enter the net weight or quantity for each.
4. Click Save.

The output is automatically moved to the appropriate destination (Freezer or Dispatch queue) based on the product code configuration.

Yield tracking

The breaking room module compares input weight (primals received) against output weight (portions recorded) to calculate yield percentage. This data feeds into the Costing module.

Waste recording

Any trim, bone, or waste generated during breaking must be recorded via Record Waste. Waste codes are pre-configured by the system administrator.
